Rich Tomato Soup with Fresh Onion

A creamy and nutritious delight made with fresh tomatoes, onions and a pinch of herbs.


Serves 2 | Time: 30 mins

Ingredients

400g tomato puree

1 carrot

1 onion

4 cloves garlic

Thyme to taste

1L hot water


Step 1

Peel and dice the carrot into cubes. Peel and chop the onion and garlic.

Step 2

Heat oil in a pan until hot. Add the garlic, then fry. Add the Onion and carrot.

Step 3

Step 4

Add the tomato, reduce to medium heat and cook for another 10 minutes.

Step 5

Put cooked vegetables into blender, add thyme, salt and pepper to taste.

Step 6

Transfer to a serving bowl and enjoy.
